Vanilla Bean Mousse
Description
Vanilla Bean Mousse is a smooth, airy dessert made with real vanilla beans, whipped cream, and a custard-style base. It has a delicate sweetness and a luxurious texture that melts in your mouth. The use of real vanilla beans gives it a deep, aromatic flavor that’s far superior to extract alone.
Ingredients (Serves 4–6)
- 2 cups heavy whipping cream (cold)
- 1 vanilla bean (or 2 tsp vanilla extract)
- 3 large egg yolks
- 1/4 cup granulated sugar
- 2 tbsp water
- 1 tsp gelatin powder
- Pinch of salt
Instructions
1. Prepare the gelatin
- Sprinkle gelatin over 2 tbsp water in a small bowl.
- Let it bloom for 5 minutes.
2. Infuse the vanilla
- Split the vanilla bean lengthwise and scrape out seeds.
- Heat 1/2 cup cream with seeds and pod until just warm (not boiling).
- Remove from heat and let steep for 10 minutes.
3. Make the custard base
- In a bowl, whisk egg yolks, sugar, and salt until pale.
- Slowly pour warm cream into yolks while whisking.
- Return mixture to low heat, stirring constantly until slightly thickened (coats the back of a spoon).
4. Add gelatin
- Remove from heat and stir in bloomed gelatin until dissolved.
- Let mixture cool to room temperature.
5. Whip the cream
- Whip remaining cream to soft peaks.
6. Fold together
- Gently fold whipped cream into cooled custard mixture in batches.
7. Chill
- Spoon into serving glasses.
- Refrigerate for at least 3–4 hours until set.
Notes
- Using real vanilla bean gives visible specks and richer flavor.
- Don’t overheat the custard—it can scramble.
- Fold gently to keep the mousse light and airy.
Tips for Best Results
- Chill your bowl and whisk before whipping cream.
- If using vanilla extract instead of a bean, add it after cooking the custard.
- For extra stability, chill mousse overnight.
- Serve with berries or chocolate shavings for contrast.

Q&A
Q: Can I make it without gelatin?
A: Yes, but it will be softer and more like a cream. Gelatin helps it hold shape.
Q: Can I use vanilla extract instead of vanilla bean?
A: Absolutely. Use about 2 teaspoons, though flavor will be slightly less complex.
Q: How long does it last in the fridge?
A: Up to 2–3 days, covered.
Q: Can I freeze vanilla mousse?
A: Not recommended—it can lose its smooth texture when thawed.
Q: Can I make it dairy-free?
A: You can try coconut cream, but the flavor and texture will change significantly.
