Ingredients:

  • 1 cup shredded mozzarella cheese (whole milk, unsweetened)
  • 1 large egg
  • 2 tbsp melted butter (or animal fat like beef tallow or pork lard)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp garlic powder (optional, for extra flavor)
  • 1/4 tsp onion powder (optional, for extra flavor)

Instructions:

  1. Preheat the Pan:

    • Heat a non-stick skillet or cast iron pan over medium-low heat. You can lightly grease it with a bit of butter or animal fat.
  2. Prepare the Dough:

    • In a microwave-safe bowl, melt the mozzarella cheese in the microwave. Heat for about 30-45 seconds, then stir until smooth and melted. (Alternatively, you can melt the cheese in a saucepan over low heat.)
    • Once the cheese is melted, let it cool slightly.
    • Add the egg, melted butter (or animal fat), salt, and optional seasonings (garlic and onion powder). Stir well until everything is combined and the mixture is smooth.
  3. Form the Tortillas:

    • Place a piece of parchment paper or a silicone baking mat on your counter or workspace.
    • Divide the mixture into 4-6 portions (depending on the size you want your tortillas).
    • Use your hands or a rolling pin to flatten each portion into a round, thin tortilla shape. You can also place the dough between two sheets of parchment paper and roll it out.
  4. Cook the Tortillas:

    • Place the flattened dough in the heated skillet.
    • Cook for about 2-3 minutes on one side, or until it starts to turn golden brown and you see some bubbles forming.
    • Flip the tortilla and cook for another 1-2 minutes on the other side.
    • Repeat with the rest of the dough portions, adding more butter or fat to the pan as needed.
  5. Serve:

    • Once all your tortillas are cooked, remove them from the pan and let them cool slightly.
    • Use them as a base for meats, wraps, or as a side to any carnivore meal.

Tips:

  • Adjust the thickness: If you want thinner tortillas, roll them out as thin as possible, but if you prefer thicker ones, make them a little thicker. The dough is quite flexible!
  • Storage: These tortillas can be stored in the fridge for 3-4 days. Just wrap them in parchment paper or place them in an airtight container.
  • Reheat: You can reheat them in a skillet or in the microwave, but be careful not to overcook them when reheating, as they can get too crisp.
