Wafer Barrel Meatloaf

Ingredients

  • 1½ lbs ground beef (80/20 for juiciness)
  • 1 egg
  • 1 cup crushed butter-flavored crackers (like Ritz)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup milk
  • ½ cup ketchup (plus more for topping)
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • 1 tbsp brown sugar (optional, for glaze)
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine ground beef, crushed crackers, egg, milk, chopped onion, minced garlic, ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix just until combined — don’t overmix.
  3. If using, fold in shredded cheddar cheese.
  4. Transfer mixture into the prepared loaf pan. Shape it into a loaf.
  5. In a small bowl, mix ¼ cup ketchup with brown sugar (if using) and spread evenly over the top of the meatloaf.
  6. Bake for 50–60 minutes, or until internal temperature reaches 160°F (71°C).
  7. Let rest 5–10 minutes before slicing. Serve with mashed potatoes, green beans, or your favorite comfort side.
