Turkish Grandma

By Amna Malik

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp salt
  • ½ cup warm water (adjust as needed)
  • 2 tbsp olive oil or melted butter
  • 200g ground beef or lamb (optional, for filling)
  • 1 onion, finely chopped
  • 1 tsp paprika
  • 1 tsp black pepper
  • ½ tsp cumin
  • Fresh parsley, chopped

Instructions

  1. In a mixing bowl, combine flour and salt. Slowly add warm water and knead until a soft dough forms. Cover and let it rest for 20–30 minutes.
  2. Meanwhile, prepare the filling: sauté onion in olive oil, add ground meat, and cook until browned. Season with paprika, cumin, pepper, and parsley. Let cool.
  3. Divide the dough into small balls and roll each into thin circles.
  4. Place 1–2 tbsp of filling in the center of each circle. Fold and seal edges tightly.
  5. Heat a pan or griddle, lightly oil it, and cook each stuffed flatbread until golden on both sides.
  6. Brush with butter while hot and serve warm with yogurt or tea.

Would you like me to make this recipe more like a traditional Turkish “Grandma’s bread” (Bazlama / Gözleme) style, or keep it more like a stuffed flatbread with meat?
