Spinach & Feta Flatbread with Lemon Cream
Ingredients:
2 flatbreads or naan
2 tablespoons olive oil
2 cloves garlic, minced
2 cups fresh spinach, chopped
1/2 cup crumbled feta cheese
1/2 cup shredded mozzarella cheese
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
For the Lemon Cream:
1/2 cup Greek yogurt
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon olive oil
Pinch of salt
Directions:
Preheat oven to 400°F (200°C). Place flatbreads on a baking sheet.
In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute, then stir in spinach. Cook until wilted, about 2-3 minutes.
Spread spinach mixture evenly over the flatbreads. Sprinkle with feta, mozzarella, black pepper, and red pepper flakes if using.
Bake for 8-10 minutes, or until cheese is melted and bubbly.
Meanwhile, prepare the lemon cream by whisking together Greek yogurt, lemon juice, zest, olive oil, and salt.
Remove flatbreads from the oven, drizzle with lemon cream, slice, and serve warm.
