Ingredients

  • 3 eggs
  • A pinch of salt
  • 8 g vanilla sugar
  • 100 ml milk
  • 1 tablespoon instant coffee
  • 180 g flour
  • 20 g bitter cocoa

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line a cake pan.
  2. In a bowl, beat the eggs with a pinch of salt until fluffy.
  3. Add the vanilla sugar and mix well until dissolved.
  4. Warm the milk slightly, then stir in the instant coffee until dissolved. Let it cool a bit.
  5. Slowly add the milk-coffee mixture into the egg mixture while stirring.
  6. Sift together the flour and cocoa powder, then gently fold into the wet mixture until smooth and lump-free.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool before slicing. Serve plain or dust with powdered sugar.
