Pepperoni Pizza Quesadillas recipe

Ingredients

  • 2 low-carb tortillas (or cheese wraps for extra keto-friendly option)
  • ½ cup shredded mozzarella cheese
  • 8–10 slices of pepperoni
  • 2 tbsp sugar-free pizza sauce (or marinara)
  • 1 tbsp grated Parmesan cheese
  • 1 tsp Italian seasoning (oregano, basil, thyme mix)
  • 1 tsp olive oil or butter (for frying)

Instructions

  1. Heat a skillet over medium heat and lightly grease with olive oil or butter.
  2. Place one tortilla in the skillet and spread 1 tbsp of pizza sauce evenly.
  3. Sprinkle half of the shredded mozzarella cheese on top.
  4. Add pepperoni slices and a pinch of Italian seasoning.
  5. Sprinkle the rest of the mozzarella cheese, then cover with the second tortilla.
  6. Cook until the bottom tortilla is golden brown, about 2–3 minutes.
  7. Carefully flip and cook the other side until crispy and cheese is melted.
  8. Remove from skillet, slice into wedges, and sprinkle with Parmesan.
  9. Serve hot with extra sugar-free pizza sauce for dipping!
