Ingredients

For the “Soil” Base:

  • 2 cups crushed chocolate sandwich cookies (like Oreos, filling included)
  • 1/4 cup melted butter

For the Creamy Coconut Layer:

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup shredded sweetened coconut
  • 1 tsp vanilla extract
  • 1 tub (8 oz) whipped topping (like Cool Whip)

For the Pineapple Dream Layer:

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk
  • 1 can (8 oz) crushed pineapple (with juice)
  • 1 tub (8 oz) whipped topping

Optional Garnishes:

  • Toasted coconut flakes
  • Mini chocolate chips
  • Fresh fruit (kiwi, strawberries, pineapple)

Instructions

  1. Make the Soil Base:
    • Mix crushed cookies with melted butter.
    • Press mixture into the bottom of a 9×9-inch dish or trifle bowl. Chill in fridge while you prep the layers.
  2. Creamy Coconut Layer:
    • Beat cream cheese and powdered sugar until smooth.
    • Mix in coconut and vanilla, then fold in whipped topping.
    • Spread evenly over the chilled cookie crust.
  3. Pineapple Dream Layer:
    • In a bowl, whisk pudding mix and milk until it starts to thicken (about 2 minutes).
    • Stir in crushed pineapple with juice.
    • Fold in whipped topping until creamy.
    • Spread over coconut layer.
  4. Chill:
    • Refrigerate for at least 4 hours (or overnight) to set.
  5. Garnish & Serve:
    • Top with toasted coconut, chocolate chips, or fresh fruit before serving.
