Oatmeal Apple Pancakes (No Flour, No Sugar)

Simple, healthy, and naturally sweet!
Made with oatmeal, apples, yogurt, and eggs — great for breakfast or a post-workout snack.

 Ingredients

  • 1 cup (90g) oatmeal (old-fashioned or quick oats)

  • 2 medium apples, peeled and chopped

  • 2 eggs

  • 150g (about ½ cup) plain yogurt (Greek or regular)

  • 1 tsp baking powder

  • (Optional) ½ tsp cinnamon or vanilla extract for extra flavor

 Instructions

  1. Blend ingredients:
    Add apples, eggs, yogurt, oatmeal, baking powder (and cinnamon/vanilla if using) to a blender or food processor. Blend until smooth and creamy.

  2. Rest the batter:
    Let it sit for 5 minutes to thicken slightly as the oats absorb moisture.

  3. Cook the pancakes:
    Heat a non-stick skillet over medium heat and lightly grease it with oil or butter.
    Pour small rounds of batter onto the pan.

  4. Flip and finish:
    Cook for 2–3 minutes per side, until golden brown and cooked through.

  5. Serve warm:
    Enjoy plain or with Greek yogurt, nut butter, honey, or fresh fruit. 🍓🍯

  • Use ripe apples (like Fuji or Gala) for natural sweetness.
