- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 3 large eggs
- 2 cups (250g) all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup (120ml) milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour mini cake pans or line a mini muffin tin.
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Divide the batter evenly among the prepared mini pans.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the mini cakes to cool in the pans for 5 minutes, then transfer to a wire rack to cool completely.
