Mini Butter Cake

Ingredients

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • 2 cups (250g) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (120ml) milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour mini cake pans or line a mini muffin tin.
  2. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  3. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Divide the batter evenly among the prepared mini pans.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the mini cakes to cool in the pans for 5 minutes, then transfer to a wire rack to cool completely.
