MEATLOAF IN A MUFFIN PAN

Ingredients

  • 1 lb lean ground beef (or ground turkey/chicken for lighter option)
  • 1 small onion, finely chopped
  • 1/2 cup oats or breadcrumbs (whole wheat preferred)
  • 1/4 cup skim milk (or unsweetened almond milk)
  • 1 large egg
  • 2 tbsp ketchup (plus extra for topping)
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried Italian seasoning
  • Salt and black pepper, to taste
  • Cooking spray

Instructions

  1. Preheat oven to 400°F (200°C). Lightly spray a muffin pan with cooking spray.
  2. In a large mixing bowl, combine the ground beef, onion, oats/breadcrumbs, milk, egg, ketchup, Worcestershire sauce, and all seasonings. Mix until just combined (do not overmix).
  3. Evenly divide the mixture into the muffin pan cups (makes about 10–12 mini meatloaves).
  4. Spread a small spoonful of ketchup on top of each meatloaf muffin.
  5. Bake for 15–20 minutes, or until the internal temperature reaches 160°F (70°C).
  6. Remove from oven, let rest for 5 minutes, then serve hot.
