Ingredients
- 1 lb lean ground beef (or ground turkey/chicken for lighter option)
- 1 small onion, finely chopped
- 1/2 cup oats or breadcrumbs (whole wheat preferred)
- 1/4 cup skim milk (or unsweetened almond milk)
- 1 large egg
- 2 tbsp ketchup (plus extra for topping)
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried Italian seasoning
- Salt and black pepper, to taste
- Cooking spray
Instructions
- Preheat oven to 400°F (200°C). Lightly spray a muffin pan with cooking spray.
- In a large mixing bowl, combine the ground beef, onion, oats/breadcrumbs, milk, egg, ketchup, Worcestershire sauce, and all seasonings. Mix until just combined (do not overmix).
- Evenly divide the mixture into the muffin pan cups (makes about 10–12 mini meatloaves).
- Spread a small spoonful of ketchup on top of each meatloaf muffin.
- Bake for 15–20 minutes, or until the internal temperature reaches 160°F (70°C).
- Remove from oven, let rest for 5 minutes, then serve hot.
