Lemon cake that melts in your mouth

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • Pinch of salt
  • 2 large eggs
  • 1/2 cup sugar
  • 1/3 cup vegetable oil (or melted butter)
  • 1/2 cup plain yogurt (or sour cream)
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

For Glaze (optional but amazing):

  • 1/2 cup powdered sugar
  • 1–2 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease a small cake pan or line with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs and sugar until light and fluffy.
  4. Add oil, yogurt, lemon juice, zest, and vanilla — mix well.
  5. Gently fold in the dry ingredients until just combined (don’t overmix).
  6. Pour batter into the prepared pan and bake for 12–15 minutes (or until a toothpick comes out clean).
  7. Let it cool slightly. For extra flavor, whisk powdered sugar with lemon juice and drizzle over the warm cake.
