- 1 cup all-purpose flour

- 1/4 tsp baking soda
- Pinch of salt
- 2 large eggs
- 1/2 cup sugar
- 1/3 cup vegetable oil (or melted butter)

- 1 tbsp lemon zest

- 1–2 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease a small cake pan or line with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat eggs and sugar until light and fluffy.
- Add oil, yogurt, lemon juice, zest, and vanilla — mix well.
- Gently fold in the dry ingredients until just combined (don’t overmix).
- Pour batter into the prepared pan and bake for 12–15 minutes (or until a toothpick comes out clean).
- Let it cool slightly. For extra flavor, whisk powdered sugar with lemon juice and drizzle over the warm cake.
