Ingredients
- 1 large head cauliflower, cut into florets
- 2 tbsp olive oil
- 1½ tbsp honey
- 1½ tsp curry powder
- ½ tsp ground turmeric (optional, for extra color and warmth)
- ½ tsp garlic powder
- Salt and pepper, to taste
- Fresh chopped parsley or cilantro, for garnish (optional)
- Lemon wedges, for serving (optional)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- In a large mixing bowl, whisk together the olive oil, honey, curry powder, turmeric (if using), garlic powder, salt, and pepper.
- Add the cauliflower florets to the bowl and toss until they are evenly coated in the spiced honey mixture.
- Spread the cauliflower in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until the cauliflower is golden brown and caramelized at the edges.
- Remove from the oven and garnish with fresh parsley or cilantro if desired. Serve with lemon wedges on the side for a bright finish.
