Honey Curry Roasted Cauliflower

Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1½ tbsp honey
  • 1½ tsp curry powder
  • ½ tsp ground turmeric (optional, for extra color and warmth)
  • ½ tsp garlic powder
  • Salt and pepper, to taste
  • Fresh chopped parsley or cilantro, for garnish (optional)
  • Lemon wedges, for serving (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. In a large mixing bowl, whisk together the olive oil, honey, curry powder, turmeric (if using), garlic powder, salt, and pepper.
  3. Add the cauliflower florets to the bowl and toss until they are evenly coated in the spiced honey mixture.
  4. Spread the cauliflower in a single layer on the prepared baking sheet.
  5. Roast for 25–30 minutes, flipping halfway through, until the cauliflower is golden brown and caramelized at the edges.
  6. Remove from the oven and garnish with fresh parsley or cilantro if desired. Serve with lemon wedges on the side for a bright finish.
