Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream (or plain yogurt)
- 2 medium apples, peeled & finely chopped
Cinnamon Swirl Mixture:
- ¼ cup brown sugar
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
- Mix in sour cream until smooth. Gradually add dry ingredients, mixing until just combined.
- Fold in chopped apples gently.
- In a small bowl, mix brown sugar and cinnamon for the swirl.
- Pour half the batter into the loaf pan, sprinkle with half of the cinnamon swirl, then top with remaining batter. Sprinkle the rest of the swirl mixture on top.
- Use a knife to gently swirl the cinnamon mixture through the batter.
- Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before slicing. Enjoy warm with butter or drizzle of glaze if desired.
