Garlic Herb Baked Chicken Thighs

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika (optional for color)
  • 1 tablespoon fresh lemon juice (optional)
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat chicken thighs dry with paper towels. This helps the skin get crispy.
  3. In a small bowl, mix olive oil, minced garlic, salt, pepper, thyme, rosemary, and paprika.
  4. Rub the garlic herb mixture evenly over the chicken thighs, making sure to get some under the skin for extra flavor.
  5. Place the thighs skin-side up in a baking dish or on a rimmed baking sheet lined with foil or parchment paper.
  6. Bake uncovered for 35–45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crisp.
  7. Optional: For extra crispiness, broil for the last 2–3 minutes, watching carefully to avoid burning.
  8. Remove from oven, drizzle with lemon juice (if using), and sprinkle with chopped parsley.
  9. Let rest for 5 minutes before serving.
