- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup buttermilk (or milk + 1 tbsp lemon juice)
- 2 large eggs
- ½ cup unsalted butter, melted and cooled
- 1 tsp vanilla extract
- 1 cup Fruity Pebbles cereal (plus extra for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs, then add buttermilk, melted butter, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Avoid overmixing.
- Gently fold in the Fruity Pebbles cereal, reserving a handful for topping.
- Pour the batter into the prepared loaf pan. Sprinkle the reserved Fruity Pebbles evenly on top.
- Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, tent with foil.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
