Fruity Pebbles Breakfast Bread


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup buttermilk (or milk + 1 tbsp lemon juice)
  • 2 large eggs
  • ½ cup unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 1 cup Fruity Pebbles cereal (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the eggs, then add buttermilk, melted butter, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Avoid overmixing.
  5. Gently fold in the Fruity Pebbles cereal, reserving a handful for topping.
  6. Pour the batter into the prepared loaf pan. Sprinkle the reserved Fruity Pebbles evenly on top.
  7. Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, tent with foil.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
