Fried Cabbage with Bacon, Onion & Garlic

Ingredients

  • 1 medium head green cabbage, chopped
  • 5–6 slices of thick-cut bacon, chopped
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/2 tsp crushed red pepper flakes (for a little heat)
  • Optional: 1 tbsp butter (for extra richness)

Instructions

  1. In a large skillet or Dutch oven over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.
  2. Add the sliced onion to the skillet. Sauté for about 4–5 minutes, until softened and beginning to caramelize.
  3. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the chopped cabbage to the pan. Toss well to coat in the bacon fat, then cover with a lid and cook for about 8–10 minutes, stirring occasionally, until the cabbage is tender and starts to brown in spots.
  5. Remove the lid, season with salt, pepper, and crushed red pepper flakes if using. Add butter if you’d like it a bit richer. Stir in the cooked bacon.
  6. Cook uncovered for another 2–3 minutes to let the flavors meld. Taste and adjust seasoning.
  7. Serve hot as a hearty side or a main dish!
