Crispy Potato Egg Fritters

Ingredients

  • 3 medium potatoes, peeled and grated
  • 2 eggs
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped (optional)
  • 2 tbsp fresh coriander, chopped
  • 2 tbsp all-purpose flour (or breadcrumbs)
  • ½ tsp red chili powder
  • ½ tsp black pepper
  • ½ tsp salt (or to taste)
  • Oil for shallow frying

Instructions

  1. Grate the potatoes and squeeze out excess water using a clean cloth or paper towel.
  2. In a bowl, combine grated potatoes, eggs, onion, green chilies, coriander, flour, chili powder, pepper, and salt. Mix well until everything is combined.
  3. Heat oil in a frying pan over medium heat.
  4. Scoop small portions of the mixture and carefully drop them into the hot oil. Flatten slightly with a spatula.
  5. Fry until golden brown and crispy on both sides (about 3–4 minutes per side).
  6. Remove and place on paper towels to absorb excess oil.
  7. Serve hot with ketchup, mint chutney, or yogurt dip.
