- 1 cup canned sweet corn (drained) or fresh corn kernels
- 1 cup creamed corn
- 1 cup milk
- 2 large eggs
- ¼ cup butter (melted)
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- ½ cup sour cream (optional, for extra creaminess)
- Optional toppings: chopped green onions, jalapeños, or more cheese
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish (8×8-inch or similar size).
- In a large bowl, combine cornmeal, flour, baking powder, salt, and sugar.
- In another bowl, whisk together milk, eggs, melted butter, and sour cream (if using).
- Stir in sweet corn and creamed corn.
- Gradually mix the wet ingredients into the dry ingredients until just combined—do not overmix.
- Fold in the shredded cheese.
- Pour batter into the prepared baking dish and spread evenly.
- Bake for 35–40 minutes or until golden brown on top and a toothpick inserted in the center comes out clean.
- Let it cool slightly before serving. Garnish with more cheese or green onions if desired.
