  • 1 cup creamed corn
  • 1 cup milk
  • 2 large eggs
  • ¼ cup butter (melted)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • ½ cup sour cream (optional, for extra creaminess)
  • Optional toppings: chopped green onions, jalapeños, or more cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish (8×8-inch or similar size).
  2. In a large bowl, combine cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together milk, eggs, melted butter, and sour cream (if using).
  4. Stir in sweet corn and creamed corn.
  5. Gradually mix the wet ingredients into the dry ingredients until just combined—do not overmix.
  6. Fold in the shredded cheese.
  7. Pour batter into the prepared baking dish and spread evenly.
