Instructions:

  1. Prepare the Batter: In a bowl, mix egg yolks, sugar, salt, oil, vanilla, and milk. Sift the cake flour three times and whisk until smooth.
  2. Whisk Egg Whites: In a separate bowl, whisk egg whites until foamy. Add lemon juice and sugar gradually, whisking until stiff peaks form.
  3. Combine Mixtures: Gently fold the egg whites into the yolk mixture until incorporated. Be careful not to overmix, as this will deflate the foam.
  4. Pour and Tap: Pour the mixture into a greased and lined 7-inch round baking pan. Tap the pan 2-3 times to remove air bubbles.
  5. Bake: Use a water bath method by placing the cake pan in a larger tray filled with hot water. Bake at 150°C (302°F) for 75-80 minutes or until the cake is firm and set in the center.
  6. Cool: Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack. Dust with powdered sugar or frost as desired.
