Cheesy Potato Roll Recipe (3 Potatoes Only!)

 

Ingredients

For the potato base:

  • 3 large potatoes (about 600–700g), peeled and grated

  • 2 eggs

  • 100g (1 cup) shredded mozzarella or any melting cheese

  • 3 tbsp all-purpose flour (or cornstarch for gluten-free)

  • Salt and black pepper to taste

  • 1 tsp garlic powder (optional)

For the filling (customizable):

  • 100g cooked ham, diced (or cooked chicken, mushrooms, etc.)

  • 100g shredded mozzarella or cheddar

  • 1–2 tbsp chopped green onions or parsley

For topping:

  • 50g shredded cheese

  • Chopped herbs for garnish

Instructions

  1. Preheat Oven
    Preheat to 200°C (400°F). Line a baking sheet with parchment paper.

  2. Prepare the Potato Base

    • Grate the potatoes and squeeze out excess water using a clean towel.

    • In a bowl, mix grated potatoes, eggs, flour, salt, pepper, and garlic powder until combined.

  3. Bake the Base

    • Spread the potato mixture evenly onto the baking sheet (about 1 cm thick).

    • Sprinkle 100g shredded cheese on top.

    • Bake for 25 minutes or until golden brown.

  4. Add the Filling

    • Remove from oven. While still warm, spread your filling (ham, cheese, herbs) evenly.

  5. Roll It Up

    • Using parchment paper, carefully roll the baked potato sheet into a log shape.

    • Sprinkle with extra cheese on top and bake again for 5–10 minutes, until melted and bubbly.

  6. Serve

    • Let rest for 5 minutes before slicing.

    • Garnish with parsley or green onions.
