🥞 Carnivore Soufflé Pancake (SUPER FLUFFY)

Ingredients (1 large pancake)

  • 3 large eggs, separated

  • 2 tbsp cream cheese or mascarpone

  • 1 tbsp butter (for pan + optional topping)

  • 1 tbsp heavy cream (optional for extra tenderness)

  • 1 tsp vanilla extract (optional, allowed by many carnivores)

  • Pinch of salt

  • 1 tsp collagen powder (optional, helps structure & fluff)

🔥 Instructions

1. Prep your egg base

  • Separate egg whites and yolks into two bowls.

  • In the yolk bowl, whisk together:

    • yolks

    • cream cheese

    • heavy cream (optional)

    • vanilla (optional)

    • pinch of salt

Mix until smooth and creamy.

2. Make stiff whipped egg whites

  • Beat egg whites with a hand mixer.

  • When foamy, add optional collagen.

  • Beat until stiff peaks form (holds its shape).

3. Fold gently

  • Add 1/3 of the egg whites into the yolk mixture to lighten it.

  • Then gently fold the rest in.
Do not stir hard — you want maximum fluff.

4. Cook soufflé-style

Option A — Skillet + Lid (Easiest)

  • Preheat a nonstick pan on LOW heat.

  • Add butter.

  • Pour batter into the center (it should be tall).

  • Cover with a lid.

  • Cook 10–12 minutes on low until set and golden.

  • Flip carefully and cook 1–2 more minutes.

Option B — Oven (Tallest & most like photo)

  • Preheat oven to 350°F (175°C).

  • Grease a ramekin or 4–5 inch cake ring with butter.

  • Pour batter inside.

  • Bake 18–22 minutes until tall, golden, and puffed.

5. Serve

Top with:

  • a pat of butter

  • whipped cream cheese (optional)

  • egg-based “syrup” if desired

Serve immediately while hot and puffy!
