🥞 Carnivore Soufflé Pancake (SUPER FLUFFY)
✅ Ingredients (1 large pancake)

3 large eggs, separated

2 tbsp cream cheese or mascarpone

1 tbsp butter (for pan + optional topping)

1 tbsp heavy cream (optional for extra tenderness)

1 tsp vanilla extract (optional, allowed by many carnivores)

Pinch of salt
-
1 tsp collagen powder (optional, helps structure & fluff)
🔥 Instructions
1. Prep your egg base

Separate egg whites and yolks into two bowls.

In the yolk bowl, whisk together:

yolks

cream cheese
-
heavy cream (optional)

vanilla (optional)

pinch of salt

Mix until smooth and creamy.
2. Make stiff whipped egg whites

Beat egg whites with a hand mixer.

When foamy, add optional collagen.

Beat until stiff peaks form (holds its shape).
3. Fold gently

Add 1/3 of the egg whites into the yolk mixture to lighten it.

Then gently fold the rest in.
Do not stir hard — you want maximum fluff.
4. Cook soufflé-style
Option A — Skillet + Lid (Easiest)

Preheat a nonstick pan on LOW heat.

Add butter.

Pour batter into the center (it should be tall).

Cover with a lid.
-
Cook 10–12 minutes on low until set and golden.

Flip carefully and cook 1–2 more minutes.
Option B — Oven (Tallest & most like photo)

Preheat oven to 350°F (175°C).

Grease a ramekin or 4–5 inch cake ring with butter.

Pour batter inside.

Bake 18–22 minutes until tall, golden, and puffed.
5. Serve
Top with:

a pat of butter

whipped cream cheese (optional)
-
egg-based “syrup” if desired
Serve immediately while hot and puffy!
