  • 2 large egg yolks (room temperature)

  • 1 cup liquid animal fat (beef tallow, melted butter, duck fat, or bacon grease — cooled but still pourable)

  • 1 tsp lemon juice (optional for light tang — can skip for strict carnivore)

  • ½ tsp sea salt

  • Optional flavor ideas:

    • Pinch of garlic powder (for garlic mayo)

    • Dash of smoked salt or bone broth powder for umami richness

1. Set Up Blender

Use an immersion blender, food processor, or small jar blender.
Add egg yolks and salt to the bottom.


2. Start Blending

Begin blending and slowly drizzle in the melted animal fat in a thin, steady stream.
Keep blending until the mixture thickens and turns creamy.

💡 Tip: The fat should be warm enough to stay liquid but not hot — around body temperature (95–100°F / 35–38°C).


3. Add Optional Ingredients

Once it thickens, mix in lemon juice or any optional flavoring. Blend again for 5 seconds to combine.


4. Adjust & Store

Taste and adjust salt if needed.
Transfer to a glass jar and store in the refrigerator for up to 5 days.
