Ingredients:

8 large egg yolks

2 cups heavy cream

1 teaspoon vanilla extract

1/2 teaspoon Celtic salt

Instructions:

Prep the bowl: Chill a metal mixing bowl in the freezer for at least 10 minutes before whipping.

Whip ingredients: In the chilled bowl, combine egg yolks, heavy cream, vanilla, and salt. Whip on high speed for 8–10 minutes, until the mixture becomes thick, pale, and frothy.

First freeze: Transfer the mixture to a freezer-safe container. Freeze for 3 hours.

Second whip: Remove from the freezer and whip again until smooth and creamy.

Second freeze: Return to the freezer for another 3 hours.

Final whip & serve: Whip once more, then portion into cups or containers. Freeze until firm.

Optional topping: Drizzle with honey just before serving, if desired.
