🥩 Carnivore Crustless Cheesecake

Low-Carb • Sugar-Free • Keto-Friendly

⭐ Why You’ll Love It

This crustless carnivore cheesecake is ultra-creamy, rich, naturally low-carb, and requires only a few ingredients. No crust, no flour, no sugar — just pure dairy deliciousness.

🧈 Ingredients (Serves 8)

  • 16 oz (450 g) full-fat cream cheese, softened

  • 3 large eggs

  • ½ cup sour cream or heavy cream

  • ⅓ cup powdered sweetener (optional – use allulose/erythritol or skip for strict carnivore)

  • 1 tsp vanilla extract (optional)

  • 1 tbsp lemon juice (optional — enhances flavor)

  • Pinch of salt

(For strict carnivore, use zero sweetener + no lemon/vanilla — just cream cheese, eggs, and sour cream.)

🔥 Instructions

1. Prepare the Batter

  1. Preheat oven to 300°F (150°C).

  2. In a large bowl, beat the softened cream cheese until smooth.

  3. Add the eggs one at a time, mixing gently.

  4. Add sour cream/heavy cream, sweetener (optional), vanilla, lemon juice, and salt.

  5. Mix until completely smooth — do not overbeat.

2. Bake

  1. Grease a 7–8 inch round baking dish or springform pan.

  2. Pour the batter into the pan and tap to remove air bubbles.

  3. Bake for 45–55 minutes, until the edges are set but the center jiggles slightly.

  4. Turn off the oven and let the cheesecake cool inside for 30 minutes to prevent cracking.

3. Chill

  • Let it cool to room temperature.

  • Refrigerate for at least 4 hours, preferably overnight for best texture.

🍽 Serving & Options

  • Serve plain or topped with whipped cream for keto.

  • Strict carnivore: enjoy it as is — rich, creamy, and satisfying.

  • Great for meal prep — stays good in the fridge for up to 5 days.
