Base:

8 oz (225g) ground beef or bacon (or mix of both)

Cheesecake Layer:

8 oz (225g) cream cheese, softened

2 large eggs

¼ cup (60 ml) sour cream

2 tbsp butter, melted

¼ tsp salt
Topping (optional but delicious):

6 slices cooked sausage or pepperoni (cut in half to make 12 small rounds)

OR 4 oz shredded cheese, crisped into small rounds

Preheat Oven:
Heat to 350°F (175°C). Grease a mini muffin tin (12-count) with butter or beef tallow. -
Make the Base:

Cook the ground beef or bacon until browned and crisp.

Drain excess fat.

Spoon about 1 tsp of meat into each muffin well and press down to form a crust layer.

Make the Cheesecake Filling:

In a bowl, mix cream cheese, eggs, sour cream, melted butter, and salt until smooth.

Use a hand mixer for best results.

Fill the Muffin Tin:

Pour the cheesecake mixture evenly over the meat bases (fill nearly to the top).

Bake for 18–22 minutes, until the tops are just set and slightly golden.
