Ingredients
- 1 zucchini, sliced into ½-inch rounds
- 1 yellow squash, sliced into ½-inch rounds
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 red onion, cut into wedges
- 8 oz mushrooms, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder (or 2 cloves fresh garlic, minced)
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- Salt and black pepper, to taste
- Optional: grated Parmesan or chopped fresh parsley for garnish
Instructions
- Preheat your oven broiler to high. Line a baking sheet with foil for easy cleanup.
- In a large bowl, combine all the sliced vegetables.
- Drizzle with olive oil and sprinkle with garlic, herbs, salt, and pepper. Toss well to coat evenly.
- Spread vegetables in a single layer on the prepared baking sheet. Don’t overcrowd them—use two sheets if needed.
- Broil for 8–10 minutes, flipping halfway through, until vegetables are lightly charred and tender.
- Optional: sprinkle with Parmesan or fresh parsley before serving.
