Broiled Vegetables

Ingredients

  • 1 zucchini, sliced into ½-inch rounds
  • 1 yellow squash, sliced into ½-inch rounds
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 red onion, cut into wedges
  • 8 oz mushrooms, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder (or 2 cloves fresh garlic, minced)
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Salt and black pepper, to taste
  • Optional: grated Parmesan or chopped fresh parsley for garnish

Instructions

  1. Preheat your oven broiler to high. Line a baking sheet with foil for easy cleanup.
  2. In a large bowl, combine all the sliced vegetables.
  3. Drizzle with olive oil and sprinkle with garlic, herbs, salt, and pepper. Toss well to coat evenly.
  4. Spread vegetables in a single layer on the prepared baking sheet. Don’t overcrowd them—use two sheets if needed.
  5. Broil for 8–10 minutes, flipping halfway through, until vegetables are lightly charred and tender.
  6. Optional: sprinkle with Parmesan or fresh parsley before serving.

Serve warm as a side dish or toss with pasta, quinoa, or your favorite grain for a hearty vegetarian main!
