Ingredients
- 2 cups mixed vegetables (carrots, peas, corn, finely chopped)
- 1 cup cooked ham, finely diced
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup breadcrumbs
- 3 large eggs
- ½ cup milk
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 teaspoon dried thyme or Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil or melted butter
Instructions
- Preheat the oven to 180°C (350°F). Lightly grease a loaf pan or line it with parchment paper.
- Prepare the veggies and ham: In a large mixing bowl, combine the mixed vegetables, diced ham, shredded cheese, minced garlic, and chopped onion.
- Make the mixture: Add the breadcrumbs, eggs, milk, dried thyme, salt, and pepper to the bowl. Mix everything thoroughly until well combined. If the mixture feels too dry, add a splash of milk.
- Transfer to loaf pan: Pour the mixture into the prepared loaf pan and press down gently to compact it evenly.
- Bake: Place the loaf in the oven and bake for 40–45 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Cool and serve: Let the loaf cool for about 10 minutes before slicing. Serve warm as a main dish or with your favorite side salad.
