Carnivore Ice Cream (Kid-Friendly!) 🍦

Prep Time: 15 minutes (plus freezing time)
Freeze Time: ~6 hours total

Ingredients:

  • 8 large egg yolks

  • 2 cups heavy cream

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon Celtic salt

  • Optional: honey for drizzling

Instructions:

  1. Prep the bowl: Chill a metal mixing bowl in the freezer for at least 10 minutes before whipping.

  2. Whip ingredients: In the chilled bowl, combine egg yolks, heavy cream, vanilla, and salt. Whip on high speed for 8–10 minutes, until the mixture becomes thick, pale, and frothy.

  3. First freeze: Transfer the mixture to a freezer-safe container. Freeze for 3 hours.

  4. Second whip: Remove from the freezer and whip again until smooth and creamy.

  5. Second freeze: Return to the freezer for another 3 hours.

  6. Final whip & serve: Whip once more, then portion into cups or containers. Freeze until firm.

  7. Optional topping: Drizzle with honey just before serving, if desired.


Tips:

  • Using a metal bowl helps keep the mixture cold and airy.

  • For extra creaminess, you can fold in small chunks of cooked bacon or sugar-free chocolate after the final whip (carnivore-friendly additions!).

  • Store in an airtight container to prevent ice crystals.
