Ingredients
- 1½ lbs ground beef (80/20 for juiciness)
- 1 egg
- 1 cup crushed butter-flavored crackers (like Ritz)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ cup milk
- ½ cup ketchup (plus more for topping)
- 2 tsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme
- 1 tbsp brown sugar (optional, for glaze)
- ½ cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, combine ground beef, crushed crackers, egg, milk, chopped onion, minced garlic, ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix just until combined — don’t overmix.
- If using, fold in shredded cheddar cheese.
- Transfer mixture into the prepared loaf pan. Shape it into a loaf.
- In a small bowl, mix ¼ cup ketchup with brown sugar (if using) and spread evenly over the top of the meatloaf.
- Bake for 50–60 minutes, or until internal temperature reaches 160°F (71°C).
- Let rest 5–10 minutes before slicing. Serve with mashed potatoes, green beans, or your favorite comfort side.
