Ingredients
- 2 racks of pork baby back ribs (about 4–5 lbs total)
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon chili powder (optional for a kick)
- 2 cups of your favorite barbecue sauce (plus more for serving)
- ½ cup brown sugar (optional, for extra sweetness)
- 1 tablespoon apple cider vinegar (optional, adds tang)
Instructions
- Prep the Ribs:
- Remove the thin membrane from the back of the ribs for better texture.
- Pat ribs dry with paper towels.
- Mix the Spice Rub:
- In a small bowl, combine paprika, garlic powder, onion powder, black pepper, salt, and chili powder (if using).
- Rub the spice mix all over the ribs on both sides.
- Add to Crockpot:
- Coil the ribs into the crockpot (cut into halves if needed to fit).
- Sprinkle brown sugar and drizzle apple cider vinegar over the ribs, if using.
- Pour 1 to 1½ cups of barbecue sauce over the ribs, spreading evenly.
- Cook:
- Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours, until the ribs are tender and easily pull apart.
- Optional: Caramelize Under Broiler:
- Preheat broiler.
- Carefully remove ribs from crockpot, place on a baking sheet.
- Brush with remaining barbecue sauce and broil for 3–5 minutes until sauce caramelizes.
- Serve:
- Slice between the bones and serve hot with extra barbecue sauce on the side.
