🧈 Ingredients

  • 1 cup full-fat cottage cheese

  • 2 oz (about 2 tbsp) cream cheese, softened

  • 2 tbsp heavy cream (or more for extra fluffiness)

  • 1 tbsp beef gelatin powder (for richness & thickness)

  • 1 tbsp rendered beef tallow or unsalted butter (adds “chocolatey” depth & smooth texture)

  • 1 tsp vanilla extract (optional — omit for strict carnivore)

  • A pinch of salt

  • Optional sweet note: 1 tsp allulose or a few drops of stevia (omit for strict carnivore)


🍫 For a chocolate-like flavor (still animal-based!)

Use browned butter or caramelized ghee — when heated until nutty, it mimics that deep cocoa flavor without using plants.

(To make browned butter: heat butter in a pan over medium heat until golden brown specks form and it smells nutty. Cool before using.)


🥣 Instructions

  1. Bloom Gelatin:
    Sprinkle gelatin over 2 tbsp cold water. Let sit for 5 minutes, then gently warm until dissolved (microwave 10–15 seconds).

  2. Blend Everything:
    In a blender or food processor, combine cottage cheese, cream cheese, browned butter (or tallow), heavy cream, salt, and optional sweetener/vanilla.

  3. Add Gelatin:
    While blending, pour in the melted gelatin. Blend until silky smooth.

  4. Chill:
    Spoon into ramekins or glasses. Refrigerate for at least 30–45 minutes until firm and mousse-like.

  5. Serve:
    Top with whipped cream (from heavy cream) or grated frozen butter for garnish. Enjoy the rich, custard-like texture and buttery “chocolate” flavor!


💡 Pro Tips

  • For extra richness, whip ¼ cup heavy cream separately and fold into the mousse.

  • You can melt a bit of carnivore chocolate (made from cocoa butter + beef gelatin, if you allow it) for deeper flavor.

  • Keeps 3–4 days refrigerated — serve cold for best taste.
