🍫 For a chocolate-like flavor (still animal-based!)
Use browned butter or caramelized ghee — when heated until nutty, it mimics that deep cocoa flavor without using plants.
(To make browned butter: heat butter in a pan over medium heat until golden brown specks form and it smells nutty. Cool before using.)
🥣 Instructions

Bloom Gelatin:
Sprinkle gelatin over 2 tbsp cold water. Let sit for 5 minutes, then gently warm until dissolved (microwave 10–15 seconds). -
Blend Everything:
In a blender or food processor, combine cottage cheese, cream cheese, browned butter (or tallow), heavy cream, salt, and optional sweetener/vanilla. -
Add Gelatin:
While blending, pour in the melted gelatin. Blend until silky smooth. -
Chill:
Spoon into ramekins or glasses. Refrigerate for at least 30–45 minutes until firm and mousse-like. -
Serve:
Top with whipped cream (from heavy cream) or grated frozen butter for garnish. Enjoy the rich, custard-like texture and buttery “chocolate” flavor!
