Carnivore Cheese Balls Recipe (Zero-Carb Snack)

🧈 Ingredients

Main Mixture:

  • 1 ½ cups shredded mozzarella cheese

  • ½ cup parmesan cheese (or cheddar for stronger flavor)

  • 2 oz (56g) cream cheese, softened

  • 2 large eggs

  • 1 tbsp beef gelatin or collagen powder (for structure)

  • 1 tbsp butter or tallow, melted

  • Pinch of salt (optional — cheese is already salty)


Optional Add-Ons (for extra flavor):

  • 1 tsp crisped bacon bits

  • 1 tbsp grated hard cheese for coating

  • Dash of white pepper or smoked salt


🔥 Instructions

1. Preheat & Prep

Preheat oven or air fryer to 375°F (190°C).
Line a tray with parchment paper or lightly grease with butter/tallow.


2. Melt Cheese

In a microwave-safe bowl, combine mozzarella and cream cheese.
Microwave for 45–60 seconds (or melt gently on stovetop) until smooth and stretchy.


3. Mix the Dough

  1. In another bowl, beat eggs, gelatin, and melted butter together.

  2. Stir in parmesan cheese.

  3. Add the melted cheese mixture and mix well until you get a smooth, sticky dough.

    • If it’s too soft, chill for 5–10 minutes to firm up.


4. Shape the Balls

Scoop out portions (about 1 tbsp each) and roll into small balls.
Place on tray, leaving space between each.


5. Bake or Air Fry

  • Oven: Bake for 10–12 minutes or until golden-brown and slightly puffed.

  • Air Fryer: 375°F (190°C) for 7–8 minutes, shaking halfway.


6. Serve Hot

Serve immediately while crispy and melty inside!
Optional: Brush with a little melted tallow or butter for shine and flavor.


🧊 Storage

  • Store leftovers in fridge up to 3 days

  • Reheat in oven/air fryer for 3 minutes

  • Freeze raw balls, then bake straight from frozen (add +2 minutes)


💡 Tips

  • Want them extra crispy? Roll in a light dusting of grated parmesan before baking.

  • For more chew, add an extra ½ tbsp gelatin.

  • Perfect as a high-protein snack, side for steak, or party appetizer.
