🥩 Carnivore Birthday Cake Recipe (Meat-Based & Sugar-Free)

Servings: 8

Prep Time: 15 minutes

Cook Time: 35 minutes

Total Time: 50 minutes

🧈 Ingredients

Cake Base:

  • 1 lb (450g) ground beef (80/20 blend works best)

  • 6 large eggs

  • 4 oz (115g) cream cheese, softened

  • 2 tbsp beef tallow or butter (melted)

  • ½ tsp sea salt

  • 1 tsp gelatin powder (for firmness)

  • Optional: 1 tsp vanilla extract (if you want a “sweet-style” flavor, though still carnivore-friendly)

Frosting:

  • 8 oz (225g) cream cheese, softened

  • 4 tbsp butter or tallow

  • 1 tbsp beef gelatin powder

  • 2 tbsp heavy cream (or bone broth for savory version)

  • Optional sweet note: a few drops of stevia or monk fruit extract (if tolerated)

Decorations (optional but fun):

  • Bacon roses 🌹

  • Mini steak bites or seared meat slices for garnish

  • Whipped bone marrow “frosting” swirls

  • “Happy Birthday” topper

🔥 Instructions

1. Make the Cake Batter

  1. Preheat oven to 350°F (175°C).

  2. In a blender or food processor, combine eggs, cream cheese, melted butter/tallow, and salt.

  3. Add ground beef and gelatin powder. Blend until smooth (it should look like a thick batter).

  4. Pour mixture evenly into two greased 6-inch cake pans.

2. Bake the Cake

  1. Bake for 30–35 minutes, until firm and slightly browned.

  2. Cool completely before frosting — at least 30 minutes in the fridge.

3. Make the Frosting

  1. Whip cream cheese, butter/tallow, and heavy cream together until fluffy.

  2. Add gelatin powder and mix until smooth.

  3. Chill for 10 minutes so it thickens slightly.

4. Assemble the Cake

  1. Place one cake layer on a plate, spread frosting evenly.

  2. Add second layer and cover entire cake with remaining frosting.

  3. Use a spatula to create rustic swirls.

  4. Garnish with bacon roses, steak bites, or other fun carnivore toppings.

5. Serve & Celebrate

Keep chilled until ready to serve.
Slice and enjoy the ultimate protein-packed birthday treat — no carbs, no guilt, all flavor!

💡 Tips

  • For a sweeter version: add a few drops of vanilla and a carnivore-safe sweetener.

  • For a savory steak-style cake: skip sweeteners and decorate with jerky or ribeye slices.

  • It stores up to 3 days in the fridge or 1 month frozen.
