🍫 Carnivore Chocolate Fudge (2 Versions)

πŸ₯© Version 1: Strict Carnivore β€œFudge” (No Cocoa, No Plants)

Tastes like a creamy, buttery cheesecake fudge β€” smooth, sweet (if desired), and melt-in-your-mouth rich.

Ingredients:

  • 4 oz (Β½ block) cream cheese, softened

  • 4 tbsp butter (or beef tallow for a deeper flavor)

  • 2 tbsp heavy cream

  • Pinch of salt

  • (Optional) 1–2 tsp keto sweetener (omit for strict carnivore)

  • (Optional) 1–2 tsp vanilla extract or collagen powder for texture

Instructions:

  1. Soften cream cheese and butter at room temperature (or microwave 10–15 sec).

  2. Whip together in a bowl until smooth and creamy.

  3. Add heavy cream and salt; whip again until thick and fluffy.

  4. Taste and adjust β€” more butter = richer, more cream = smoother.

  5. Spread mixture into a small dish or silicone mold.

  6. Freeze 1 hour (or refrigerate 2–3 hours) until firm.

  7. Cut into squares β€” rich, dense, and melt-in-your-mouth.

🍫 Version 2: Carnivore-Friendly β€œChocolate” Fudge (with Cocoa or Cacao Butter)

For those doing ketovore or relaxed carnivore and okay with cocoa powder.

Ingredients:

  • 4 tbsp butter (or tallow)

  • 2 oz cream cheese

  • 2 tbsp heavy cream

  • 1–2 tbsp unsweetened cocoa powder

  • Pinch of salt

  • (Optional) 1–2 tsp keto sweetener (allulose, stevia, or erythritol)

Instructions:

  1. In a small saucepan, melt butter over low heat.

  2. Add cream cheese and stir until fully melted and smooth.

  3. Whisk in cocoa powder, cream, salt, and sweetener (if using).

  4. Stir until silky and thickened slightly.

  5. Pour into a parchment-lined dish or silicone mold.

  6. Freeze for 1 hour or refrigerate until set.

🧊 Storage:

  • Keep refrigerated up to 5 days

  • Freeze up to 1 month β€” just thaw a few minutes before eating

πŸ’ͺ Texture & Flavor Tips:

  • For firmer fudge, use more butter or tallow.

  • For softer, meltier fudge, increase cream or cream cheese.

  • Want it sweeter without plants? Add a bit of egg yolk custard base (I can show you how).
