Instructions:
- Preheat Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare Cauliflower: Steam or boil the cauliflower florets until tender (about 10-12 minutes). Drain well and mash them.
- Mix Ingredients: In a bowl, combine mashed cauliflower, eggs, Parmesan, breadcrumbs, garlic powder, salt, pepper, and parsley. Mix until well combined. If the mixture is too wet, add more breadcrumbs; if too dry, add another whisked egg.
- Form Patties: Shape the mixture into small patties. If you like, stuff each patty with a small cube of mozzarella cheese.
- Bake: Place the patties on the prepared baking sheet. Bake for about 10 minutes on each side, or until golden and crispy.
- Serve: Enjoy them hot, plain, or with a squeeze of lemon or your favorite dipping sauce.
